Who needs chocolate and roses on Valentines when you have fruit and nuts in the form of this delicious cake?

 

Ingredients:

Base:

350g of almonds, ground

200g of dates, chopped

100g agave nectar or mapel syrup

1-2 tsp. vanilla extract

Pinch of Himalayan or sea-salt

First Layer:

300g cashews, soaked in filtered water for at least 2hrs

300g fresh raspberries

100g agave nectar or mapel syrup

125g coconut oil, melted

1-2 tsp. vanilla extract

Second Layer:

300g cashews, soaked in filtered water for at least 2hrs

300g fresh blueberries

100g agave nectar or mapel syrup

125g coconut oil, melted

1-2 tsp. vanilla extract

Third Layer:

300g cashews, soaked in filtered water for at least 2hrs

300g fresh strawberries

100g agave nectar or mapel syrup

125g coconut oil, melted

1-2 tsp. vanilla extract

Topping:

100g of fresh strawberries, chopped

100g fresh blueberries

100g fresh raspberries

50g of fresh pomegranate seeds

Sauce:

200g of a mixture of fresh berries

50g of coconut oil, melted

 

Directions:

  1. Place all base ingredients into the food processor and mix well.
  2. Tip mixture into cake tin (I use a spring-form tin so it’s easy to remove from the tin afterwards).
  3. Push mixture down into the base really well and set aside.
  4. Place all the first layer ingredients into a food processor and blend well.
  5. Pour mixture on top of the base in the cake tin and smooth out.
  6. Place in the freezer for at least 2-3 hours.
  7. Place all the second layer ingredients into a food processor and blend well.
  8. Pour mixture on top of the first layer in the cake tin and smooth out.
  9. Place in the freezer for at least 2-3 hours.
  10. Place all the third layer ingredients into a food processor and blend well.
  11. Pour mixture on top of the base in the cake tin and smooth out.
  12. Place in the freezer for at least 2-3 hours.
  13. Remove the cake from the freezer an hour before you wish to eat it and pop it out of the tin.
  14. Add the fresh fruit for the topping on to the top of the cake.
  15. Blend the sauce ingredients and pour over the cake and allow 10-15mins to set.
  16. This cake freezes really well and can be eaten almost directly from the freezer like ice-cream cake!
