These raw lemon pots are super yummy and healthy and not only that, but easy to make!

 

Ingredients

200g of cashews, soaked for a min of 2hrs, but preferably overnight and rinsed

75 – 100ml of coconut oil, gently melted

3 tbsp. of maple syrup, agave or honey

1 tsp. vanilla extract

Juice and grated rind of 3 medium lemons

 

Directions

  1. Blend all the ingredients in a high speed blender until mixture is smooth
  2. Pour into pots and freeze for a min of 1 hour
  3. Serve and enjoy!
  4. You can add a cheesecake type base into the pots first.  I like a mixture of ground nuts, dates and maple syrup patted down and firmly and then the lemon mixture poured on top
  5. These pots freeze well, just remove from the freezer a couple of hours before serving
