Keto (high fat & protein) Millionaires Shortbread Recipe
Ingredients
Shortbread base:
250g salted butter
170g milk powder
4 tbsp. clean beef protein powder (chocolate flavour)
Caramel layer:
130g salted butter
50g monk fruit powder
250g of mascarpone (1x pot)
Chocolate topping:
250g of mascarpone (1x pot)
50g monk fruit powder
85g cacao powder
1 tsp. vanilla extract
1/8 tsp. sea salt
Instructions
- Place base butter into a large saucepan and bring to the boil. Stire regularly and bring to the boil for 3 mins or until brown flecks start to appear.
- Turn down to a low simmer and add milk powder and beef protein powder and use an electric whisk to stir constantly, making sure nothing sticks to the bottom.
- Turn doughy mixture into a lined, casserole dish and allow to cool, once cool place in the fridge (I did this the day before making the next layer).
- Get all your caramel ingredients at the ready!
- Add butter to a saucepan and bring to the boil again until you have brown flecks.
- Add monk fruit and use an electric whisk to whisk immediately otherwise it will clump and/or stick to the bottom.
- Add mascarpone and whisk until it resembles caramel (if it separates add a little more mascarpone until it looks like caramel when whisked).
- Allow to cool and then pour over your biscuit base. Once cooled again add to the fridge and leave there for a couple of hours to set.
- Add mascarpone for the chocolate layer into a saucepan and heat on low, stirring constantly to become smooth. Add monk fruit and whisk with electric whisk. Add vanilla extract and salt.
- When thoroughly mixed add cacao a little at a time until smooth.
- Pour on top of the caramel and place in fridge to set.
- Cut into squares and freeze until you want to eat them and then remove from the freezer an hour before hand.
