Keto Marshmallows
Ingredients
110ml cold water
3 tbsp. gelatine
160ml water
160g monk fruit
1/4 tsp. sea salt
2 tsp. vanilla extract
Instructions
- Measure out all your ingredients
- Line medium pan with greaseproof paper and coconut oil
- Pour the cold water (110ml) into a large glass bowl. Sprinkle the gelatine in, mix thoroughly and leave for 10 mins to thicken slightly
- Pour the 160ml of water into a heavy bottom saucepan, and pour in the monk fruit into the centre just lightly stir
- Bring to a boil, allowing the monk fruit to completely dissolve and the liquid to go clear
- Go back to your gelatine and mix with a slow speed hand mixer then pour in monk fruit mixture, salt and vanilla extract and continue to mix for 15mins.
- Once you notice the mixture holding its shape it’s ready.
- Quickly pour it into you lined pan and place in the refrigerator for 5mins and then remove and cut into squares and serve.
