Keto Marshmallows

Ingredients

110ml cold water

3 tbsp. gelatine

160ml water

160g monk fruit

1/4 tsp. sea salt

2 tsp. vanilla extract

 

Instructions

  1. Measure out all your ingredients
  2. Line medium pan with greaseproof paper and coconut oil
  3. Pour the cold water (110ml) into a large glass bowl. Sprinkle the gelatine in, mix thoroughly and leave for 10 mins to thicken slightly
  4. Pour the 160ml of water into a heavy bottom saucepan, and pour in the monk fruit into the centre just lightly stir
  5. Bring to a boil, allowing the monk fruit to completely dissolve and the liquid to go clear
  6. Go back to your gelatine and mix with a slow speed hand mixer then pour in monk fruit mixture, salt and vanilla extract and continue to mix for 15mins.
  7. Once you notice the mixture holding its shape it’s ready.
  8. Quickly pour it into you lined pan and place in the refrigerator for 5mins and then remove and cut into squares and serve.
