Ingredients:

150g of blueberries

125g cashews (soaked for 1-2 hours)

250ml almond milk

75g maple syrup

Juice and zest of 2 lemons

 

Directions:

  1. Place all the ingredients (accept the blueberries) is a high speed blender and blend until smooth
  2. Add the blueberries and blend for another 30 seconds
  3. Place in a tube and put in the freezer for 3 hours
  4. Serve immediately or freeze until required (remove from the freezer half an hour before eating if you leave it longer than 3 hours).
