Here’s a very quick, easy, yummy and super healthy fermented recipe you can rustle up in no time at all and add to the side of many different dishes.

Ingredients:
6 purple onions, coarsely chopped
4 tsp black peppercorns
3 tsp Himalayan or sea salt
Filtered water to top up with

Instructions:
1. Peel and quarter onions and using the large grating function on the food processor grate the whole lot.
2. Place in a large bowl with salt and peppercorns.
3. Squeeze as much of the juice out of the onion as possible, to create a brine.
4. Pack the mix, including the juice into a jar and cover with a little extra water, making sure everything it below the water line.
5. Allow to ferment for a minimum of one week, burping (opening the jar) once every couple of days for the first week.
6. Once you start eating the relish or once it has got to the desired flavour place it in the fridge.
7. This will keep for up to 6 weeks in the fridge.
