This raw vegan cashew cream can be used on top of desserts (like mince pies –  yum yum yum) or in soups etc too!



200g of cashews, soaked in water overnight

1 tbsp. maple syrup or agave nectar

1/2 tsp. vanilla extract

2 tbsp. of lemon juice

80 – 100ml of water



  1. Drain and rinse cashews and add to a high speed blender
  2. Add everything else into the blender and blend until everything is smooth
  3. Add to top of pies or into soups (can be frozen too)
