I’m not a big fan of chickpeas, so any way I can find to un-chickpea a recipe is good for me, ha.  Not only is this hemp and courgette hummus un-chickpeaed but it’s also high protein because of the hemp seeds.  And, if you have a decent food processor (or in my case I just my Nutri-bullet) then you can use hemp seeds that have not been hulled.

 

Ingredients

1 small to medium courgette, chopped

150 g hemp seeds

3 tbsp. tahini

4 cloves garlic, chopped

Juice of 1 small lemon

1/2 tsp. ground cumin

50 ml olive oil

50 ml of water

1/4 tsp. ground black pepper

1/4 tsp. ground Himalayan or sea salt

 

Directions

  1. Place hemp seeds into a high speed blender and mill until totally broken down
  2. Add all other ingredients into the blender and blend until smooth
  3. If you still have hard bits from the hemp shells in your hummus use a stronger blender, like a Nutri-Bullet (you may need to add a little more water also).
  4. Serve as a side, a dip or a spread
