Hi, having a go at some of your fermented recipes & have a question about garlic. I know this is said to be a good antibiotic & blood cleanser, so wondered how it works in a ferment? Thank you.

Thanks for your question. Yes garlic is super good for us and even better when fermented. I add it to most of my ferments and even have done whole jars of it, just by itself (although it turns greeny/blue when you do this – but it’s still perfectly fine to eat, it just looks odd). Basically, anything that normally good for you ends up being super, super good for you fermented.
Hi , I wondered if you knew of a simple guide for the water to salt ratio? I often don’t have the same size jar or ingredients and so estimate, which doesn’t always work out :/
Yes, a middle sized mason jar will need roughly 3/4 of a flat tbsp. of salt if full. So a small jar a little less and a bigger a little more. The large mason jars take about 1 flat tbsp. It doesn’t matter if there is slightly to much or to little, but if it tastes to salty then put a little less in next time (as it also depends on the type of salt you use as some are stronger than others).
