This Courgette Babaganoush recipe is a nice and simple, yet delicious side dish for hot or cold meals.



2 large courgettes

4 garlic cloves

4 tbsp. tahini

4 tbsp. olive oil

Juice ½ lemon

½ tsp. Himalayan or sea salt

2 tbsp. chopped fresh herbs of your choice (optional)



  1. Rub a little olive oil over the courgettes and oven bake turning every 15 mins or so evenly cook all the way through.
  2. When all squishy inside and the skin starts coming off as you turn them (around 1 – 1.5hrs of baking) remove and allow to cool a little before scooping out the inside of the courgettes.
  3. Put courgettes and all the other ingredients in a food processor and process until smooth.
