This Courgette Babaganoush recipe is a nice and simple, yet delicious side dish for hot or cold meals.
2 large courgettes
4 garlic cloves
4 tbsp. tahini
4 tbsp. olive oil
Juice ½ lemon
½ tsp. Himalayan or sea salt
2 tbsp. chopped fresh herbs of your choice (optional)
- Rub a little olive oil over the courgettes and oven bake turning every 15 mins or so evenly cook all the way through.
- When all squishy inside and the skin starts coming off as you turn them (around 1 – 1.5hrs of baking) remove and allow to cool a little before scooping out the inside of the courgettes.
- Put courgettes and all the other ingredients in a food processor and process until smooth.
