Ingredients

6 – 8 lemons (enough to fill your chosen jar)

1 tsp. Himalayan or sea-salt (less if you use less lemons)

1/2 tsp. cayenne pepper, ground

1/4 – 1/2 tsp. chili powder

 

Directions

  1. Top and tail lemons and then slice into quarters.
  2. In a bowl, sprinkle with salt and mix well.
  3. Sprinkle spices and mix well again.
  4. Wedge lemons into jar and fill with filtered water, to just above the lemons.
  5. Make sure everything is below the level of the water, if it is not add a little extra water until it is.
  6. Make sure there is at least 2 cm’s of space in the top of the jars.
  7. If the lemons are not wedged in and float to the top then weigh down with a pebble or a kitchen weight of some description.
  8. Burp/let the gas out every day (or twice daily if it seems lively) until to stops gassing.
  9. Once it stops gassing it is ready to consume.  Once you start consuming from the jar, put it in the fridge.
  10. Enjoy!
