125g cashews (soaked for 1-2 hours)

250ml almond milk

50g maple syrup

Juice and zest of 2 Oranges

1 square inch of ginger, peeled and grated

 

Directions:

  1. Place all the ingredients is a high speed blender and blend until smooth
  2. Place in a tube and put in the freezer for 3 hours
  3. Serve immediately or freeze until required (remove from the freezer half an hour before eating if you leave it longer than 3 hours).
