This is deliciously divine, yet somehow full of loads of things good for you!

Ingredients:

For Base:

150g almonds, ground

150g desiccated coconut

3-4 tbsp. raw honey (if hard melt down)

1 tbsp. raw cocao powder

100g coconut oil, melted

 

For Topping:

20 dates, pitted

juice of 2 oranges

zest of 2 oranges

150g raw honey (if hard melt down)

120g raw cocao powder

50g coconut oil, melted

handful pomegranate seeds and/or raspberries to garnish

 

Directions:

1. Soak dates in warm water for half an hour.

2. Place all the base ingredients into a food processor and blend until well mixed.

3. Tip into a 10-inch loose bottom tart / baking tin and press down to make a firm base.

4.  Clean food processor and then place drained dates into it and blend until small pieces.  Add all other topping ingredients to the food processor and blend until smooth.

5.  Add topping to the base, garnish and then place in refrigerator for a minimum of one hour.
