Mushroom Kimchi Recipe – Is really awesome!


1 kg of mushrooms

1 bunch green onions or 1 small white or red onion, sliced thinly

150ml of kombucha, kimchi or kraut juice from a previous batch

3 cloves, minced or 1.5 tsp. of ground garlic

3cm of fresh ginger, minced

½ a red pepper, sliced thinly

1 tsp. of chili flakes or powder

1 tsp, paprika powder

1 tbsp. of Himalayan or Sea-salt



  1. Steam mushrooms for 10 mins and then allow to cool.
  2. Blend all the other ingredients with enough filtered water to make a paste.
  3. Add mushrooms to a bowl with all the other ingredients and mix well.
  4. Place into a wide-mouthed jar leaving at least 2 inches at the top with nothing in.  Add more water if the mushrooms are not completely covered.
  5. Put the lid on a shake well.  3 time a day (or every time you pass the jar) shake the jar well (this stops it from going off).  Do this for 3 days (4 or 5 if you house is cold) and then put in the refrigerator until you wish to eat it.
