You can pretty much make a fermented version of everything and fermented salsa is super yummy and of course uber good for you!
Ingredients:
6 tomatoes, chopped
2 red onions, chopped
3 red, yellow and/or green peppers, chopped
4-5 spring onions, chopped
2-3 medium chill’s, finely sliced
3 garlic cloves, minced
1-2 limes, just the juice
1 tsp. cayenne pepper, ground
1 tsp. paprika, ground
2 tsp. Himalayan or sea salt
Directions:
- Place everything in a large jar and squash it all down.
- Add filtered water to cover the vegetables.
- Make sure everything is below the level of the water.
- Make sure there is at least 2 cm’s of space in the top of the jars.
- Weigh everything down with a pebble, a kitchen weight or a bag full of water.
- Burp/let the gas out every day (or twice daily if it seems lively) until to stops gassing.
- Once it stops gassing it is ready to consume.
- Once you start consuming from the jar, put it in the fridge.
- Enjoy!
