You can pretty much make a fermented version of everything and fermented salsa is super yummy and of course uber good for you!

Ingredients:

6 tomatoes, chopped

2 red onions, chopped

3 red, yellow and/or green peppers, chopped

4-5 spring onions, chopped

2-3 medium chill’s, finely sliced

3 garlic cloves, minced

1-2 limes, just the juice

1 tsp. cayenne pepper, ground

1 tsp. paprika, ground

2 tsp. Himalayan or sea salt

Directions:

  1. Place everything in a large jar and squash it all down.
  2. Add filtered water to cover the vegetables.
  3. Make sure everything is below the level of the water.
  4. Make sure there is at least 2 cm’s of space in the top of the jars.
  5. Weigh everything down with a pebble, a kitchen weight or a bag full of water.
  6. Burp/let the gas out every day (or twice daily if it seems lively) until to stops gassing.
  7. Once it stops gassing it is ready to consume.
  8. Once you start consuming from the jar, put it in the fridge.
  9. Enjoy!
