This soup is super simple and super yummy!

Ingredients

6 shallots, peeled and finely chopped
3 garlic cloves, peeled and finely chopped
fresh ginger, about inch size, peeled and finely chopped
celeriac, about 850g, peeled and chopped
2 ripe pears, cored, peeled and diced
½ tsp. dried basil
½ tsp. of dried rosemary
1ltr. free-from vegetable stock
2 tbsp. olive oil
1/2 tsp. Himalayan or sea-salt
1/4 ground black pepper

Directions

  1. Heat the oil in a saucepan and lightly fry the shallots, garlic and ginger until softened.
  2. Add all the other ingredients and bring to the boil.
  3. Reduce to a simmer and then cook for 20mins.
  4. Allow to cool and blend until smooth in the food processor.  Return to the same saucepan and serve when warmed through.
