Ingredients:

A selection of your favourite mushrooms to fill a jar of your choice, sliced

5-6 garlic cloves, sliced

1-2 tbsp. sauerkraut or kimchi juice

1 tsp. cayenne pepper

1 tsp. dried oregano (or coriander if you prefer)

1 tsp. black pepper, freshly ground

1 tsp. Himalayan or sea salt

 

Directions:

  1. Place all ingredients except mushrooms into your jar.
  2. Pack the mushrooms in on top of everything else.
  3. Add filtered water to cover the mushrooms.
  4. Make sure everything is below the level of the water
  5. Make sure there is at least 2 cm’s of space in the top of the jars.
  6. Weigh everything down with a pebble, a kitchen weight or a bag full of water and put the lid on.
  7. Burp/let the gas out every day (or twice daily if it seems lively) until to stops gassing.
  8. Once it stops gassing it is ready to consume.
  9. Once you start consuming from the jar, put it in the fridge.
  10. Enjoy!
