Sweetbreads with a twist..

If you don’t want to eat gluten &/or wheat or in fact any grains its not easy to get a battered finish on your food. However my amazing biltong making friends at Inyama Meats HERE have started grinding down the leftover bits of their homemade biltong and this makes an AMAZING and healthy alternative to batter.

I cut of the membrane off of 350g of sweetbreads, cut it up into bite sized pieces, rinsed it, patted it dry and covered it in the dried biltong mix. I fried it in tallow until crispy and served. It was AMAZING! I wish i had made more!

Think crispy fried chicken but not tough or dry, but really tender and tasty and with a lot more nutrients too!

Sweetbreads also known as Thymus is amazing for histamine issues, provides all 9 essential amino acids, helps blood sugar control, helps against heart disease, is rich in B12, Vit C (surprisingly high amounts), A, E, Copper, Iron, Zinc, Phosphorus, Potassium & Selenium.

Eating sweetbreads feels like you are eating junk food (it tastes so good) yet its one of the healthiest foods around.

This is not an affiliated post, i just love Inyama’s stuff, they live locally to me in central rural Portugal, work really hard, source local grass fed & finished beef and produce amazing biltong. Plus I am mega pleased to have a new favourite dish!
