Khichdi Recipe

This recipe is not only super healthy, but easy, delicious and freezes well (so I make double and freeze into portions for an easy meal later on).

 

Ingredients

200g soaked brown rice

200g soaked mung bean

1/2 a head broccoli, chopped

1 bunch spinach or kale

2 stalks celery, chopped

2 carrots, grated

1 parsnip, grated

1 onion, chopped

1 tbsp. ginger, chopped fine

1/2 – 1 green chilly, chopped

1 tbsp. garlic, chopped fine

1/2 tsp. of turmeric powder

1/2 tsp. black pepper

1/2 tbsp. cumin powder

1/2 tbsp. coriander powder

1/2 tbsp. curry powder

1 tbsp. dried seaweed, ground or chopped up small

1 – 2 handfuls of cashews (or other nuts), optional

1 handful of pumpkin seeds (or other seeds), optional

Handful of fresh parsley and/or coriander, chopped

Juice of 1/2 a lemon

4 tbsp. coconut oil

1 tbsp. salt or to taste

 

Directions

  1. Combine the rice, beans and vegetables in a pot with water and bring to the boil.  Once boil leave to simmer for 35 minuets (or until the rice is cooked)
  2. In a pan heat the oil
  3. Add the onions, ginger and garlic and cook until soft
  4. Add the green chilly and all the spices, including the black pepper
  5. Add the spices: turmeric, black pepper
  6. Cook for 5 minuets and remove from heat
  7. Once the rice mixture is ready add the spice mix to the rice
  8. Add all the other ingredients apart from the lemon juice and fresh herbs
  9. Cover it and let it simmer for 10 minuets or until all the water has gone
  10. Season to taste, add fresh herbs and lemon juice and serve
