I’m not a big fan of chickpeas, so any way I can find to un-chickpea a recipe is good for me, ha. Not only is this hemp and courgette hummus un-chickpeaed but it’s also high protein because of the hemp seeds. And, if you have a decent food processor (or in my case I just my Nutri-bullet) then you can use hemp seeds that have not been hulled.
Ingredients
1 small to medium courgette, chopped
150 g hemp seeds
3 tbsp. tahini
4 cloves garlic, chopped
Juice of 1 small lemon
1/2 tsp. ground cumin
50 ml olive oil
50 ml of water
1/4 tsp. ground black pepper
1/4 tsp. ground Himalayan or sea salt
Directions
- Place hemp seeds into a high speed blender and mill until totally broken down
- Add all other ingredients into the blender and blend until smooth
- If you still have hard bits from the hemp shells in your hummus use a stronger blender, like a Nutri-Bullet (you may need to add a little more water also).
- Serve as a side, a dip or a spread
