Ingredients:

1 smash squash, de-seeded and peeled

4 large carrots

1 tsp. ginger granules or 2-3 cm’s of fresh ginger

1 tsp. garlic granules or 1 clove garlic, mashed

1 tbsp. of curry powder

1 tsp. cumin seeds

1 tsp. mustard seeds

3 tsp. Himalayan salt

 

Directions

  1. Using the grating/shredding function in the food processor grate the squash, carrots and ginger.
  2. Place these and all the other ingredients in a bowl and mix well.
  3. Squeeze the juice from the vegetables and then pack everything (including the juice) into a few jars.
  4. Make sure everything is below the level of the juice, if it is not add a little extra water until it is.
  5. Make sure there is at least 2 cm’s of space in the top of the jars.
  6. Weigh everything down with a cabbage leaf, a pebble or a kitchen weight of some description.
  7. Burp/let the gas out every day (or twice daily if it seems lively) until to stops gassing.
  8. Once it stops gassing it is ready to consume.  Once you start consuming from the jar, put it in the fridge.
  9. Enjoy!
