Ingredients
1 pack of firm tofu
3 heaped tsp. English mustard
3 tbsp. olive oil
1 large onion, finely diced
1 inch of ginger finely chopped
2 large handfuls of kale, stems cut off and sliced thinly
2 tsp. mustard seeds
¼ of the juice of a medium lemon
1 pinch of Himalayan or Sea Salt
Directions:
- Slice through your block of tofu at ½ intervals. And then lay on some kitchen towel for 5-10 mins.
- Cover the blocks of tofu in a thin layer of mustard.
- Heat half the oil in pan and lightly cook onion and ginger. Add the kale and lemon and cook for 10 mins.
- Heat the other half of the oil in another pan and add the tofu and cook until lightly crisp. Add the mustard seeds and then turn the tofu over and cook on the other side until crisp as well.
- Place the tofu and mustard seeds on a plate and add the kale mix to the top.
