This is the most delicious free-from cake I have ever eaten! 20160624_115420

Ingredients

190g of almonds, ground
30g coconut flour
300g fresh blueberries
160g coconut oil, melted
110g honey or maple syrup
4 eggs
5 tbsp. lemon juice
zest from 2 lemons
1 tsp. baking soda
1/4 tsp. salt

For Glaze
100g desiccated coconut
3 tbsp. coconut oil, melted
3 tbsp. honey or maple syrup
2 tbsp. lemon juice
3 tsbp. warm water

Directions
1. Preheat oven to 350′ F.
2. Grease a loaf tin with a little olive or coconut oil
3. Mix the ground almond, coconut flour, baking soda, and salt in a bowl.
4. Whisk all the wet ingredients, and lemon zest together in another bowl.
5. Mix the wet ingredients in with the dry ingredients.
6. Add wet ingredients to dry and mix well.
7. Lightly fold the blueberries in the mix.
8. Place mix in loaf tin and cook in the oven for 35-40 mins.
9. Remove from the tin and allow to cool on a rack.
10. Mix all the glaze ingredients in a high speed blender and drizzle immediately over the loaf.
11. Eat and enjoy!
