Baked Courgette Recipe
Every year I like finding new and yummy ways to use up the abundance of courgettes there always is. I have made most cakes and soups you could think of, but for some reason I have never baked them (apart from a stuff marrow kind of thing). But, this recipe is super easy and delicious so I am sharing it here.
Ingredients
- 4 medium courgettes
- 150-200g grated cheese (or your choice)
- 1 handful basil, finely chopped
- 1/2 tsp. dried dill
- 3 large eggs
- 4 tbsp. olive oil
- 1 tbsp. ground garlic
- Sea salt and fresh ground pepper to taste
Directions
Preheat oven to 180 °C or gas mark 4.
Heat 1/4 of the oil in a pan and slice courgette into disks or lengths and add to the pan when hot. Sprinkle with salt, pepper and a little garlic and cook on both sides until soft. Repeat for all the courgettes, adding more oil as needed and set aside.
Whisk the eggs and add the cheese (save a little bit for the top of your bake), dill and basil to the eggs and mix.
Spread a small amount of oil in an oven proof dish and start to layer courgettes with egg/cheese mixture.
Add the last of the cheese to the top of the bake and then put it in the oven for 40/45mins.
