I love ice cream, even in the colder months!  So, making a raw vegan Christmas ice cream seemed only logical to me!  ;0)

 

Ingredients:

2 large bananas

100g of dried fruits (like raisins, sultanas, figs etc)

2 oranges, juiced

2 tbsp. of maple syrup or agave nectar

1/2 tsp. vanilla extract

1/2 tsp. ground cinnamon

1/2 tsp. ground nutmeg

50g of chopped nuts (optional)

 

Directions:

  1. Apart from the dried fruit (and nuts if you choose to add them), add the other ingredients to a blender and blend until smooth
  2. Add in dried fruit (and nuts) and mix well with a spoon and pour into small bowls
  3. Freeze for at least 2hrs (or as long as you like) and sprinkle with a little cinnamon just before serving
